What’s On The Menu? Chicken Pasta

A couple of weeks ago I was out of ideas for supper.  I had thawed some chicken breasts out but didn’t know what to do with them.  Then genius struck.  I pulled out some spaghetti sauce and noodles and made my own version of Chicken Parmesan.  Here’s what I did.

First, I cleaned the chicken breasts.  I cut off the extra fat (that’s that nasty looking pile in the upper left hand corner) and then cut the 2 boobies in half so they weren’t so thick.  Next, pepper and salt them.

Heat a little EVOO in a skillet.  Dice up some onion and garlic and cook that for a few minutes, until the onion is transparent.

Add the chicken and cook it until cooked through.  Doesn’t take too long since they’re thinner.  Once cooked through add your jar of spaghetti sauce and simmer until heated through, or let it simmer until your noodles are done.  Either is fine.

Meanwhile, back at the ranch, boil your spaghetti noodles according to package directions.  If you really want to impress your family heat up some garlic bread, too.  Then just plate it up.

Really easy and, because it involved spaghetti sauce, my husband loved it.  Oh, and don’t mind the pickles on there.  For some reason I’ve been craving my mom’s homemade pickles lately.  Seriously gals, those things are da’ bomb!  They are dill and delicious!
