What’s On The Menu? Mexican Chicken Pizza

We’re all trying to lose weight, right? But I doubt any one of us like that we have to eat less to do so.  I found this recipe on Live Better America’s website and have made it a couple of times.  It tastes great and it’s actually filling!  And, the best part, one serving is only 340 calories (this recipe makes 6 servings, which is a huge piece!!!).  So I thought I’d share it with you.  Sorry, no pics, forgot that all important part of being a blogger when I made this last week.

Mexican Chicken Pizza

  • 1 1/2 C. flour
  • 1 T. sugar
  • 1 1/4 tsp. active dry yeast (this is NOT full packet)
  • 1/4 tsp. coarse salt (kosher or sea)
  • 3/4 c. warm water
  • 1 T. olive oil
  • 1/3 c. yellow cornmeal, plus some additional for later
  • 1 1/2 c. shredded Mexican cheese blend
  • 1 1/2 c. shredded, cooked chicken breast
  • 1 can diced tomatoes, drained
  • 1/2 medium green bell pepper, chopped
  • 1/2 medium red bell pepper, chopped
  • 1/4 c. sliced green onions

Heat oven to 450degrees.  In bowl, mix 3/4 c. flour, the sugar, yeast and salt.  Stir in warm water and oil.  Beat with mixer on low speed 30 seconds.  Beat on high speed 1 minute.  Stir in 1/3 c. cornmeal and remaining 3/4 c. flour to make a soft dough.

On lightly floured surface, knead dough until smooth and elastic, about 5 minutes.  Cover, let rest 10 minutes.

Spray large cookie sheet with cooking spray; sprinkle with additional cornmeal.  On cookie sheet press dough into 14x10 inch rectangle; prick with fork.  Bake 8 to 10 minutes, until edges begin to turn golden brown.

Sprinkle with 1 c. Mexican cheese.  Top with chicken, tomatoes, and peppers.  Sprinkle remaining cheese over top.  Bake 6 to 8 minutes longer, until cheese is melted and edges are golden brown.  Sprinkle with onions. 

 

My boys eat this, which is saying something because they are a little picky.  Andy adds salsa to his for a little extra flavor and some kick.  I hope you give it a try.  Seriously, these are big portions, filling and healthy!
